¼ cup maple syrup¼ cup fresh orange juice
¼ cup Pukara olive oil
1 tsp chili flakes
1 clove garlic, sliced
1 Red onion, cut in wedges
1 bunch dutch carrots
1 Butternut Pumpkin, chopped with the skin on
1 medium Sweet potato, chopped with the skin on
2 sprigs rosemary
Preheat oven to 180 degrees celsius.
Step 1 In a small bowl combine maple syrup, orange juice, olive oil, chilli flakes and garlic.
Steps 2 On a roasting tray add red onion, carrots, pumpkin and sweet potato. Coat with half of the dressing and place rosemary sprigs on top.
Step 3 Place in the oven and cook for 45 minutes to an hour, or until golden brown.
