Watermelon Salad

¼ cup Robur farm goats cheese
½ cup watermelon, chopped
½ cup strawberries, chopped
1 Tbsp Pukara white balsamic
1 Tbsp Pukara olive oil
Pinch of Tasman Sea Salt
4 mint leaves
8 Rocket leaves



Step 1 Place strawberries, watermelon, white balsamic, olive oil and salt in a bowl, toss to combine.

To serve, place mint leaves and rocket on top of the salad. Finish with a few dollops of goats cheese.
