Tomato and Bocconcini Salad

1 garlic clove
1/2 cup Cherry tomatoes, halved
3 tbsp Lemon vinaigrette, refer to recipe 2-132
1 purple shallot, sliced
1 tsp Capers

to serve;
2 slices sourdough, toasted
fresh basil
edible flowers (optional)



Step 1 Rub a garlic clove onto the top of each slice of sourdough, cut sourdough into bite size croutons.

Step 2 add cherry tomatoes, lemon vinaigrette, shallot, capers, bocconcini and a crack of pepper to a bowl, toss to combine.

to serve, place 1/2 of the croutons onto a plate and top with tomato salad. place remaining croutons on top and garnish with fresh basil leaves and edible flowers.
