Tempura Abalone

Cook time 5 minutes
Serves 2-3


1 abalone, sliced thinly
1 cup plain flour
½ cup cornflour
Pinch of Tasman sea salt
½ cup soda water, cold
½ cup ice
500mls canola oil


Step 1 Using half of the plain flour, lightly coat sliced abalone.

Step 2 Add corn flour, remaining plain flour, salt, soda water and ice to a bowl, mix until it forms a thin batter.

Step 3 Heat oil in a pan to 160-180 degrees. Coat abalone in a thin layer of batter. Place abalone in oil for approximately 45 seconds to a minute. Remove excess oil with paper towel and season with a pinch of sea salt.
