Huon Salmon Tartare

½ cup Huon salmon loin fillet lightly smoked, diced
1 Tbsp purple shallots, diced
1 Tbsp red chilli, diced
1 Tbsp cucumber, diced
1 Tbsp gherkins, diced
1 Tbsp capers, diced
1 Tbsp pukara Lemon oil
Juice of 1/2 a lemon
Pinch of Tasman Sea Salt
2 radishes, thinly sliced
Fresh dill, to garnish



Step 1  Place salmon, shallots, chilli, cucumber, gherkins and capers in a bowl and stir. Dress with lemon oil and lemon juice, season with salt.

To serve, place radish rounds on a plate, spoon salmon mixture on top. Garnish with fresh dill.
