Salmon Sashimi with Avocado Puree and Fresh Wasabi

75g sashimi grade salmon, thinly sliced
Fresh Sima wasabi, grated (using a wasabi grated)
1 pickled onion, thinly sliced
½ tsp soy sauce
For the avocado puree;
Juice of ½ a lime or lemon
Pinch of Tasman sea salt
1 tsp Pukara olive oil
Fresh micro herbs, to serve
Step 1 To make the avocado puree, blend together avocado, lemon/lime juice, salt and oil until it forms a puree.
To serve, spread avocado onto a plate and top with sashimi salmon slices. Place a few pea size piece of wasabi over the salmon and place onion rounds on top. Drizzle with soy sauce. Garnish with fresh micro herbs.
