Prawn and Hot Sauce Omelette

Serves 1-2



3 eggs
Pinch of Tasman Sea salt
3 spring onions, sliced
50g cooked prawn meat, finely chopped
1/4 cup fresh salsa (finely diced cucumber, tomato and red onion)
1 tbsp of hot sauce, plus extra to serve

to serve;

1 tbsp Chipotle mayonnaise
1/4 bunch coriander

Pair with a Clover Hill Brut Rose



Step 1 In a bowl whisk together eggs and salt, add ⅓ of the spring onion, salsa and whisk together. Pour mixture into a pan over medium to low heat. Cook until the eggs start to set, approximately 3-5 minutes.

Step 2 Place prawns and hot sauce onto one side and flip.

To serve, transfer to a plate and top with remaining spring onion, hot sauce, chipotle mayonnaise and coriander.

Serve with a glass of Clover Hill Brut Rose
