Pickled Wasabi Stalks with Wood Roasted Salmon

4-5 Shima wasabi stalks
½ - 1 cup Blue Banner pickled onions pickling stock
1 heaped tbsp Meander Valley creme fraiche
½ cup mixed grains, pre cooked
100g Huon wood roasted salmon, at room temperature
4-6 leaves fresh seaspray (or preferred herb), to garnish
Step 1 Slice wasabi stalks thinly on a mandoline and place into a bowl. Pour pickling stock over the top, ensuring all stalks are covered. Allow to pickle for a minimum of 10 minutes.
To serve, place a dollop of creme fraiche onto a plate, top with mixed grains, wood roasted salmon and pickled wasabi stalks. Garnish with fresh herbs.
