Joel's Mac and Cheese

2 tsp sodium citrate
1 cup water
200g Ashgrove vintage cheddar cheese, grated
75g gorgonzola, crumbled

To serve;
150g Barilla fusilli or pasta of choice, cooked to packet instructions
Walnuts, toasted



Step 1 Add sodium citrate and water to a pot and bring to the boil. Add cheddar cheese and gorgonzola, reduce to a medium heat and stir until cheese has melted. Use a stick blender to smooth out any clumps and thicken the mixture.

To serve, toss pasta through the cheese sauce and top with toasted walnuts.
