Hot Smoked Salmon Smashed Potato

150g Huon hot smoked salmon, broken into chunks
6-8 Chat Potatoes, part boiled
1 Lemon, juice and zest
1 bunch Dill, roughly chopped
2 sprigs of young thyme
2 tbsp Pukara olive oil
1 tbsp Pukara Wasabi Mayonnaise
2 tbsp Meander Valley Crème fraiche
1 red onion, finely diced
1 tbsp Kewpie Mayonnaise
Rocket leaves



Preheat oven to 180 degrees

Step 1 In a tray smash the potatoes and drizzle with olive oil and a pinch of salt. Place in the oven and cook for approximately 30 minutes or until golden.

Step 2 Meanwhile, in a bowl add crème fraiche, wasabi mayonnaise, kewpie mayonnaise, red onion, lemon juice and zest, dill, thyme, salmon chunks and a pinch of salt. Stir to combine.

Step 3 To serve, place salmon mix on top of the smashed potatoes and garnish with fresh dill.
