Asian Chilli Chicken

Serves 4



2 tbsp Pukara olive oil
3 garlic cloves, thinly sliced
4 cm knob of ginger
½ cherry tomatoes
3 chilli, sliced
6 spring onion, chopped (plus extra to serve)
800g chicken thighs, roughly chopped
Pinch of Tasman Sea salt
2 tbsp demerara sugar
Juice of 1 lemon
⅓ cup ketchup manis



Step 1 In a pan over medium heat add olive oil, garlic, ginger, tomatoes, chilli, spring onion and stir. Saute for 10 minutes, stirring occasionally.

Step 2 Turn the heat to high and add in the chicken and salt, saute for a few minutes. Once chicken starts to caramelise, stir and add sugar, lemon juice, ketchup manis. Stir and simmer until chicken is fully cooked.

Step 3 Remove from the heat and add fresh spring onion.
